About the Recipe

Lapsi Recipe is a Gujarati sweet dish made from broken wheat has an age-old significance of being auspicious. It is made on special occasions like buying a home, new job, new baby or any other memorable occasion with prayers of good luck for the new beginning.
Broken wheat is rich in fiber and jaggery is rich in vitamins and minerals making Lapsi a very nutritive sweet. The traditional recipe that is made is plain and simple without any nuts and spices. However, adding fruits like grapes, dried raisins and nuts to this recipe makes it richer and tastier.

Ingredients

  • 1 cup - wheat germ (dalia)

  • 1.5 cup - sugar or 2 cups - jaggery

  • 1 cup - ghee

  • 1 tbsp - chopped almonds & pistachios mixed

  • 3 cups - water

  • 1/2 tsp - cardamom powdered

Preparation

Steps:


  1. Stir and cook till the wheat germ turns golden in colour and exudes aroma.

  2. Meanwhile melt sugar or jaggery in one cup of water.

  3. Keep aside

  4. Boil and add remaining water to roasted wheat germ.

  5. Stir gently and cook till the grain of the germ is soft.

  6. Now add sugar or jaggery, cardamom and chopped dry fruit.

  7. Stir and simmer covered, stirring occasionally.

  8. Cook till ghee separates along the sides.

  9. Serve hot.
